Enjoy this crisp over the holidays to help avoid the junk and not feel deprived.
What you’ll need:
Peel, core and slice 4-6 apples, depending on size
Mix them with 1/2-2/3 cup of your favourite natural fruit juice – sometimes I use apple, sometimes pineapple or berry, and sometimes diluted lemon/lime!
Set aside.
Separate bowl:
Blend 2-3 tbsp coconut oil (melted) or Sunshine Coast butter-flavoured olive oil
1/4 cup ground flaxseed
1/4-1/3 cup rolled oats, gluten-free if you prefer
1 heaping scoop vanilla protein powder
1/2 cup organic dark brown sugar (or drizzle of honey and a drizzle of molasses)
2 tbsp unsweetened coconut, optional
1/8 cup water (approx)
Preheat oven to 375 degrees.
Blend all ingredients well. Mix in water – a small amount at a time – until desired ‘crumble’ effect is achieved. Pour the crumble mixture over apples and bake for 45 minutes. Turn over to broil to brown the top for 3-5 minutes. Watch carefully so it doesn’t burn.
Top with a scoop of 0% Greek yogurt and enjoy!
