This PowHERful Summer Super-Salad delivers, and it is quick and easy!
If you are anything like me, you love summer salads that are refreshing, crunchy and flavourful. Definitely, a PowHERful Meal in Minutes when you have your protein prepared.
Coleslaw
Snap or sugar peas
Red pepper
Dressing:
2 tbsp tzatziki
Squirt Bragg’s or gluten-free tamari
2 tbsp flax seed oil
1 tbsp baslamic vinegar!)
Squirt of lemon or lime juice (optional)
Top with 1/4 cup low-fat refried black beans and your choice of protein (fish goes nicely!) A sprinkle of sunflower seeds add even more crunch.
