PowHERfuel: Grated Chicken & Pear Broccoli-slaw Salad

If you think salads are boring, you need to break the mold!  Our featured PowHERfuel recipe for this week is a super summer salad:  Grated Chicken & Pear Broccoli-slaw with Coconut Tzatziki Dressing.  It is nutrient-dense and provides great flavour and crunch!

In a perfect world, your protein would be pre-cooked from your weekend food prep (right?!) but just in case it isn’t…

Prepare your protein:

  • Grill or bake your chicken breast in tin foil
  • Season with your favourite spice, a shot of hot sauce and generous drops of lemon or lime juice
  • Depending on the size of the breasts, bake at 400 degrees for 40 minutes (flip after 20).

Grated Chicken Pear Broccolislaw with Tzatziki Coconut DressingCreate your salad:

  • 1 bag broccoli slaw
  • 1 pear chopped up
  • Pinch of chopped cilantro (optional)
  • Sprinkle dried cranberries (optional)
  • Sprinkle sunflower seeds (optional)
  • Sprinkle unsweetened coconut (optional)

Mix in your homemade dressing:

  • Use tzatziki as your base, 2-3 generous tbsp
  • Mix in 1 tbsp guacamole or 1/4 mashed ripe avocado
  • Add Bragg’s Liquid Soy, about a tbsp
  • Add lime juice, about a tbsp
  • Add Coconut White Balsamic Vinegar, Sunshine Coast Olive Oil, about a tbsp
  • Add your favourite flax seed or olive oil, about 1+ tbsp
  • Mix well and add to salad – mix in thoroughly

Final touches:

  • Plate your salad and add your protein.
  • 3/4-1 cup grated chicken breast is a generous serving.
  • Top with a drizzle of hot sauce or sweet chili sauce.

There are tons of variations to this summer salad.  That’s what makes it fun.  You can make it as simple or elaborate as you want!
