Are you looking for a fresh ready-for-summer delicious dinner idea that fits into your lean-eating routine?  You are going to love our nectarine salsa with crispy shake ‘n bake chicken and yam fries.

Ready to get started?  Let’s get the chicken in the oven.  Warm up your oven to 400 degrees and prepare two previously marinated chicken breasts in the following crispy batter, ready to bake:

Mix together:  PowHERfuel Shake ‘n Bake

1 bag Simply Protein Chips made into ‘bread crumbs’ – use your Kitchen Ninja or food processor

2 tbsp Skinny B by Holy Crap cereal

Dash garlic powder

Dash Clubhouse Grille chipotle & mango spice

Dash chipotle pepper (optional)

Bake uncovered for 15-20 minutes depending on thickness of chicken breasts.  Flip over and back another 15-20 minutes.

Yam fries can bake at the same time on a small cookie sheet.  Keep your yam slices fairly thin to cook evenly (you may want to broil fries for a few minutes once you take the chicken out to crisp them up).  At sea salt while they bake if you wish.

 

While your chicken is in the oven, chop the following ingredients for your salsa:

2 Nectarines

1 Tomato – ripe

1 Green onion

Cilantro to taste

Lightly stirfry ingredients in coconut oil and taste a dash of sea salt.  Don’t overcook – just a few moments.

 

To serve:

Carefully slice your chicken breast in half (width-wise).  Open up the ‘chicken sandwich’ and add your salsa in the middle along with a tbsp of tzatziki.  Serve with yam fries and enjoy.
