BAJA Fish Tacos Featuring Skinny B Cereal for a Crispy Coating!

We have made up a PowHERhouse special secret ‘coating-mix’ that provides us with just that.

Our local grocer just added a wicked fresh fish and seafood counter! To celebrate, we’ll be featuring a NEW fish or seafood recipe every week over the summer months.

Baja Fish Tacos with Skinny B Cereal:

1 tbsp olive oil or coconut oil (we love Sunshine Coast Olive Oils)

1 lb tilapia fillets (or white fish available) ½ cup 0% plain greek yogurt

¼ cup lime juice

Garlic salt to taste

4 – 6” whole wheat or gluten-free tortillas

1 cup shredded green cabbage (coleslaw in a bag works great)

¼ cup salsa

PowHERhouse Special Secret Coating Mix:

4 tbsp. Skinny B cereal Sprinkle garlic powder (approx 1 level tsp)

Sprinkle chipotle seasoning (optional – approx 1 level tsp)

Sprinkle black pepper

Directions: Coat a skillet with olive oil over medium heat. Cook fillets about 7 minutes per side or until opaque and flaky. Meanwhile, in a small bowl, whisk together yogurt, lime juice and garlic salt. Place fish in tortilla, top with cabbage, yogurt sauce and salsa.
